Minami Sayaka ichiban 2016- Icho (bihakko kamairi)

from 9.10

Name: Minami Sayaka Ichiban 2016 by Yoichi Koorogi

Variety: Icho (bi hakko kamairi)

Origin: Gokase, Miyazaki

Tea maker: Yoichi Koorogi

Harvest: 2016

Plant variety: Minamisayaka (Miyazaki native variety)

Subtle yet prominent orange flower and peach when you first open the package. When brewed overtone of orange flower dominates on the nose. Fair amount of tannin and acidity clings, enough to hint that this plant decended from Assam variety.  short finish with minty licorice full on your pallate long after finish.

The brew has nice light golden yellow color.  Fragrance, tannin and acidity may need to round off and settle to its place, meaning this tea may require some maturing.  I would wait for at least until the late automn to taste this tea again. But, the multiple layer of overtone suggest this tea has potential to evolve to yield new flavour and aroma after maturing.  Right now, the tea tastes straight forward and young.

Brewing suggestion:

Brew with: 3g (2 heaping tea spoon) tea with 150ml water

1st infusion: at 100 C  for 1 1/2 min

2nd infusion: at 100 C for 1 1/2 min

3rd infusion:  at 100 C for 1 1/2 min
